Blueberry Baked Oatmeal

This Blueberry Baked Oatmeal is an easy breakfast recipe that's a great way to start the day and will keep you full all morning long.

Ingredients

  • 3 cups old fashioned rolled oats
  • 1 cup brown sugar packaged
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 ½ cups milk
  • ½ cup unsalted butter melted (1 stick)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups fresh or frozen blueberries optional
  • ½ cup chopped nuts pecans or walnuts, optional

Serving

  • yogurt
  • fresh berries
  • maple syrup
  • honey

Instructions

  • Preheat the oven to 350 degrees F.
  • Spray a 9x9 inch square baking dish with cooking spray, set aside.
  • In a large bowl, whisk together the oats, brown sugar, cinnamon, nutmeg, baking powder and salt.
  • In a medium bowl, whisk together the milk, melted butter, eggs and vanilla extract.
  • Pour the wet mixture into the dry mixture and stir to combine.
  • Stir in the blueberries.
  • Spread evenly into the prepared pan.
  • Top with chopped nuts, if desired.
  • Bake for 35-40 minutes or until center looks almost set.
  • Serve immediately with yogurt, fresh berries, syrup or honey if desired.
  • Store leftovers in the refrigerator.
