In a small bowl, whisk together the soy sauce, Worcestershire sauce, mustard, garlic, brown sugar, and pepper until well combined.
Place the pork chops in a shallow dish or resealable bag, pour marinade over the pork.
Set aside and allow to marinate for at least 1 hour, up to 4 hours.
Heat the grill to medium high heat.
Remove the pork chops from the marinade and discard the marinade.
Place the pork chops on the grill and turn heat to medium low and cook for 3-5 minutes per side, or until an instant-read thermometer inserted in the thickest part of the pork chop reaches 145 degrees F.
Remove from the grill and let sit 5 minutes before serving.
Store leftovers in refrigerator.
Pellet Grill / Traeger
Set the temperature to 450 degrees and preheat for 15 minutes- lid closed.
Once preheated, place the marinated pork chops directly on the grill.
Cook for 30 minutes - flipping once halfway (after 15 min).
Remove and let rest for 5 minutes before serving.
Notes
*Regardless of method - Always cook until internal temp reaches 145 degrees.
**Adjust the time accordingly if cooking thin pork chops. It can be really easy to overcook and dry out thin pork chops on the grill.
