Chocolate Pretzel Brownie Cookies

Servings 30 cookies
- 1 box brownie mix (18 ounces) use one that contains baking soda to prevent flat cookies
- 1/2 cup all-purpose flour
- 2 large eggs
- 5 tbsp vegetable oil
- 1/2 tsp baking soda if using a brownie mix that does not contain baking soda, add 1 tsp
- 1/2 cup Ghirardelli 60% Cacao Bittersweet Chocolate Chips
- 1/3 cup crushed pretzels
Preheat the oven to 350 degrees.
Line 2 baking sheets with parchment and set aside.
In the bowl of a stand mixer, combine the brownie mix, flour, eggs, oil, and baking soda. Mix on low using the paddle attachment until the dough comes together and all the ingredients are mixed well.
Fold in the chocolate chips and crushed pretzels.
Portion the dough out onto the prepared baking sheets using a small cookie scoop.
Bake 7-8 minutes or until the tops are no longer glossy. DO NOT OVERBAKE. (If using a medium cookie scoop, bake 9-10 minutes)
Let the cookies cool on the pan before transferring to an airtight container for storage.
