No-Bake Chocolate Haystacks

No-Bake Chocolate Haystacks are a classic holiday treat. They are easy to make with just 4 ingredients, PLUS they keep well when included in care packages.

Ingredients

  • 1 cup white chocolate chips
  • 1 cup milk chocolate chips
  • 1-2 tbsp coconut oil **OPT use only if your chocolate seizing & isn't wanting to melt (as white chocolate can sometimes do)
  • 1 cup chopped walnuts
  • 2 cups chow mein noodles *Can substitute with crisp rice noodles if desired

Instructions

  • Combine both types of chocolate chips in a medium saucepan.
  • Cook on the stovetop over medium/low heat, stirring often. (If you are having trouble with getting the chocolate to melt - this is where you would stir in some coconut oil to get it melted & creamy)
  • Once melted completely, remove from heat & stir in the nuts & chow mein noodles.
  • Fold the mixture until the noodles are completely covered in the chocolate.
  • Drop spoonfuls onto a parchment-lined baking sheet.
  • Let sit at room temperature for at least 2-3 hours to solidify the chocolate.

Notes

*NOTE- you can also pop them in the fridge for about 45 minutes if you get impatient as I do.
