Loaded with cheese & pressure cooked to perfection, these Easy Scalloped Potatoes are the perfect side dish to any weeknight or holiday meal. Delicious!

Ingredients
2poundspotatoes(about 5-6 medium)
12ouncesevaporated milk
4ouncesmilk
1pktranch seasoning packet(1 ounce)
2cupsshredded cheddar cheese
1cupcooked – chopped bacon
1-1/4cupswater
1/4cupParmesan cheese & 2 tsp parsley for garnish – opt
Instructions
Combine evaporated milk, milk & ranch seasoning packet in a bowl & whisk well.
Layer half of the potato slices in the bottom of a 7-8″ deep dish baking pan.
Top with half of the bacon crumbles & a 1/2 cup of the cheese.
Pour half of the milk mixture over the potatoes.
Repeat the layers with the remaining ingredients.
Cover with foil.
Using a foil or silicone sling, place in the bottom of the pot on top of your trivet.
Add in water & place the lid on.
Cook on the rice setting (on the Souspreme Multi Pot) for 40 minutes. (or manual for 40 minutes) Quick-release when done.
Carefully remove with sling & uncover.
*Opt – top with additional cheese & broil for 2-5 minutes to brown the cheese before serving - or use a small butane torch to brown the cheese.
Sprinkle with Parmesan cheese & parsley prior to serving.
