Preheat the Air Fryer to 310 degrees.
Grease a mini loaf pan with shortening. Set aside.
In a medium mixing bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
In a larger bowl, combine, egg, brown sugar, melted butter, oil, and vanilla. Whisk until smooth.
Add the dry ingredients to the wet mixture and mix until just combined.
Fold in zucchini and most of the chocolate chips, reserving a few for the top.
Transfer to prepared mini loaf pan.
Sprinkle the remaining chocolate chips on top.
Bake in air fryer at 310 degrees for 30 to 35 minutes, or until toothpick test comes out clean.
Remove from the air fryer and cool on a wire rack until slightly warm.
Then remove from the loaf pan and continue cooling on the wire rack before storing in an airtight container.
