Easy to make White Chocolate Macadamia Nut Cookies that are so soft, chewy and positively delicious. Great as neighbor gifts or served at any holiday party.

Ingredients

  • 1 cup butter softened (2 sticks)
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2-1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp table salt
  • 1 cup macadamia nuts coarsely chopped
  • 1 cup white chocolate chips

Instructions

  • Preheat oven to 350 degrees F
  • In a large mixer bowl, cream together butter & sugars until smooth.
  • Slowly beat in eggs
  • Mix in extracts.
  • Add in flour, baking soda, and salt, beating well.
  • Fold in the macadamia nuts & white chocolate.
  • Drop dough by teaspoonfuls onto a parchment lined baking sheet.
  • Bake 8-10 minutes, or until golden brown.
  • Add additional chocolate chips on top while cookies are still hot
  • Transfer to a wire cooling rack after 2-3 minutes & allow to cool to room temperature before transferring to an airtight container.
