Cheesy Potato Casserole

Cheesy Potato Casserole, also known as funeral potatoes or party potatoes are a favorite side dish. So easy, these are perfect for any meal or holiday.

Ingredients

  • 2 bags frozen cubed hash browns thawed (12 oz each)
  • 2 cups sour cream
  • 1 can cream of chicken soup 10 oz
  • 1/2 cup butter melted
  • 1 tsp table salt
  • 1 tsp onion powder
  • 2 cups shredded cheddar cheese
  • 2-1/2 cups crushed potato chips or corn flakes or crackers
  • 1/2 cup butter melted

Instructions

  • Preheat oven to 350 degrees.
  • Thaw potatoes in a colander.
  • Combine the corn flakes, crackers or chips & 1/2 cup melted butter - toss to coat. Set aside.
  • Combine sour cream, soup, & 1/2 cup melted butter in a bowl. Mix it well.
  • Add salt, onion & cheese & mix until all combined.
  • Fold in potatoes.
  • Place in greased 9×13 baking dish.
  • Sprinkle on butter coated corn flakes, crackers or crushed chips.
  • Bake uncovered for 40-50 minutes.
