Pork Stuffing

Pork Stuffing, that's loaded with peppers, chilies, potatoes & ground pork. It's delicious!

Ingredients

  • 1 lb fresh ground pork
  • 1 tbsp minced garlic
  • 3 cups O'Brien potatoes or home fries includes bell pepper & onions
  • 3 tbsp olive oil
  • 1 7oz can salsa verde
  • 1 4 oz can green chiles
  • salt/pepper/ season salt to taste

Instructions

  • In a medium skillet brown ground pork along with minced garlic over medium high heat
  • In another skillet add olive oil & potatoes- cover & heat over medium, stirring every 1-2 minutes until potatoes are soft when poked but crisp on the outside - approx 7-10 minutes
  • Once your pork/garlic is browned & has reached at least 160 degrees- add your salsa verde & chilies & stir - reduce heat & simmer while you continue cooking your potatoes
  • Once potatoes are done, transfer pork mixture with potatoes in a large bowl & fold carefully to combine- making sure to not break the potatoes. Add in salt, pepper & season salt as desired.
  • Serve immediately - enjoy!
