Skillet Breakfast Potatoes & Bacon

Skillet fried potatoes with bacon, chives & cheese.

Ingredients

  • 6-8 russet potatoes- peeled & chopped
  • 1 package bacon
  • salt/pepper to taste
  • 1/4 cup parmesan cheese
  • 2 tbsp bread crumbs
  • 1 tbsp chives

Instructions

  • Fry bacon in a large cast-iron skillet over medium-high heat until evenly browned and crisp
  • Remove from the pan & add the potatoes to the bacon drippings
  • Season with salt & pepper
  • Reduce heat to medium & cook potatoes for about 20 minutes, stirring occasionally, until tender and browned
  • Chop bacon & sprinkle on top along with cheese, chives & bread crumbs before serving.

Notes

To make these in the air fryer - reduce the recipe by 50-75% to fit in the size of your air fryer. Then cook at 400 degrees for 20-30 minutes, stirring every 10 minutes or so.
