Honey Roasted Almonds

  • 2 cups almonds
  • 2 tbsp raw honey
  • 2 tbsp granulated sugar
  • 3/4 cup coarse sea salt
  • 3 tbsp raw sugar
  • 1/4 tsp nutmeg


  • Preheat oven to 325 degrees
  • Line a baking sheet with parchment paper & spread almonds over it in an even layer
  • Once oven is to temperature, place sheet in oven & bake 10 minutes
  • While almonds are baking, combine granulated sugar & honey in a small saucepan
  • Heat over low heat until sugar has dissolved & mixture comes to a boil
  • Allow to bubble 1-2 minutes before removing from heat
  • Remove almonds from oven after 10 minutes, carefully transfer to a medium sized bowl, add honey mixture & toss to coat
  • Transfer back to parchment lined baking sheet, spread out into an even layer & bake again for 15 minutes
  • Remove from oven & allow to cool completely
  • Once cooled, separate any almonds that are stuck together & place all the almonds in a small bowl
  • In another small bowl, combine salt, raw sugar & nutmeg - stir
  • Transfer mixture to almonds & toss to coat while almonds are still slightly sticky
  • Can be store in an air-tight container for several weeks
