Simple Blackberry Cobbler

Ingredients

  • 24 ounces frozen blackberries thawed and patted dry
  • 1 box french vanilla cake mix
  • 16 ounces clear soda such as Sprite or 7-up

Instructions

  • Preheat the oven to 350 degrees.
  • Lightly spray a 9x13 baking dish with cooking spray.
  • Spread the blackberries in an even layer over the bottom of the prepared dish.
  • Add the dry cake mix over the top of the berries.
  • Slowly pour the soda over the top of the cake mix making sure you moisten nearly all of the dry mix. This will give you your crust.
  • DO NOT STIR - if you stir you will have a top more like a cake- not a crust.
  • Bake for 45-60 minutes. Watch closely after the 45 min mark - allow it to brown on top but every oven is different and you don't want it to burn on top. If you want it really brown you can broil the top for a couple of minutes.
  • Remove & allow to cool slightly before serving. We prefer ours with a scoop of vanilla ice cream or whipped cream on top.
