Banana Macadamia Nut Mini Muffins
Banana Macadamia Nut Mini Muffins are a simple & delicious breakfast recipe. Always a favorite, kids will be begging for more muffin recipes like these.
- 1 cup whole wheat flour
- 1/4 cup unrefined coconut oil melted
- 2 eggs
- 2 large ripe bananas- mashed with a fork
- 1 tsp baking soda
- 1/4 cup pure maple syrup or raw honey
- 1/2 cup chopped macadamia nuts
Preheat oven to 350 degrees
Grease 2 12-hole mini muffins trays with coconut oil. Set aside.
In a large bowl add all the ingredients in the order listed above- excluding the nuts
Whisk until smooth.
Fold in nuts
Spoon the batter into the muffin trays (I used my mini cookie scoop)
Bake for 10-15 minutes max or until the toothpick test is clean
Remove from pans & cool on a wire rack before storing in an airtight container
