Banana Macadamia Nut Mini Muffins

Banana Macadamia Nut Mini Muffins are a simple & delicious breakfast recipe. Always a favorite, kids will be begging for more muffin recipes like these.

  • 1 cup whole wheat flour
  • 1/4 cup unrefined coconut oil melted
  • 2 eggs
  • 2 large ripe bananas- mashed with a fork
  • 1 tsp baking soda
  • 1/4 cup pure maple syrup or raw honey
  • 1/2 cup chopped macadamia nuts


  • Preheat oven to 350 degrees
  • Grease 2 12-hole mini muffins trays with coconut oil. Set aside.
  • In a large bowl add all the ingredients in the order listed above- excluding the nuts
  • Whisk until smooth.
  • Fold in nuts
  • Spoon the batter into the muffin trays (I used my mini cookie scoop)
  • Bake for 10-15 minutes max or until the toothpick test is clean
  • Remove from pans & cool on a wire rack before storing in an airtight container
