Blueberry Granola Cereal

Ingredients

  • 4 cups quick oats
  • ¼ cup milled flax seed
  • ½ cup slivered almonds
  • ½ cup chopped walnuts
  • ¾ cup coconut
  • 2 tsp cinnamon
  • ½ cup brown sugar
  • 1 tsp salt
  • cup coconut oil
  • 4 tbsp raw honey
  • ½ cup water
  • 1 tsp vanilla extract
  • 1 cup dried blueberries

Instructions

  • Preheat oven to 350 - 275 for convection.
  • Line a large baking sheet with parchment - set aside.
  • In a large bowl- combine all dry ingredients - except blueberries.
  • In a medium bowl combine wet ingredients & whisk.
  • Pour wet ingredients into dry mix & stir to coat so entire mixture is moist.
  • Transfer to prepared baking sheet & spread in a thin, even layer.
  • Bake 55 minutes - stir every 15 minutes.
  • After 30 minutes of baking- add blueberries.
  • Cool completely before transferring to an airtight container.
  • Use within 1 week.

Notes

**To make this recipe in the Air Fryer - Preheat to 250 degrees. Adjust the ingredients, either reducing by 50-75% depending on the size of your air fryer. Cook for 30 minutes - stirring every 10 minutes. 
Note - this can be made with gluten-free oats. Alternate mix-ins can include pumpkin seeds, maple syrup in place of honey, dried cranberries.
