Southwestern Egg & Potato Casserole


  • 1- 1 1/2 C potatoes O'Brien with onion and peppers
  • Salt pepper and garlic powder to taste
  • 1/2 C cooked and diced {any combination of the following} bacon ham, sausage or green chilies {if desired}
  • 6 eggs
  • 2 Tbsp whole milk or half & half
  • 1/2 C shredded cheddar cheese


  • Heat oven to 350*; spray an 8 x 8 dish with non-stick cooking spray
  • Arrange potatoes in a single layer in pan
  • Add salt, pepper and garlic powder
  • Add {any combination of the following} bacon, ham, sausage or green chilies {if desired}
  • In a medium bowl, beat eggs and milk
  • Pour egg mixture over potatoes
  • Sprinkle with cheese
  • Bake at 350* for 50 minutes or until eggs are firm
