Keto Fudge is a delicious holiday treat made with cream cheese. It is a great low-carb alternative to traditional holiday fudge recipes. Tastes so good, you'll never know it's sugar-free.
Combine the butter, unsweetened chocolate, and vanilla in a small saucepan.
Heat over medium-low stirring occasionally until the butter and chocolate are melted and you have a smooth, silky consistency.
Add the sweetener and heat and stir until the sweetener has dissolved and the mixture is no longer gritty. You don't want grittiness in your fudge when it is all mixed.
Remove from the heat and allow to cool to room temperature.
While the chocolate is cooling, whip the cream cheese in the bowl of a stand mixer until light and fluffy. You can also use a hand mixer for this process.
Once whipped, pour in the cooled chocolate mixture and beat again until well combined.
Spread the mixture into the prepared pan.
Chill in the freezer to set for a few minutes before cutting.

Note - the nutrition calculations here are slightly different from what I got when adding this to my carb manager app. That showed 102 calories per piece with 5 grams of carbs, 0.3 grams of fiber & 4.1 grams of erythritol - resulting in 0.6 grams of net carbs.Also - keep in mind that not all cream cheese has the same carb count. I have found that the store brand has twice as many as the Philadelphia cream cheese. So just watch your labels.
