Ingredients

  • 5 medium russet potatoes
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 ½ cups cheddar cheese sharp - shredded

1 teaspoon fresh parsley for garnish

      Instructions

      • Preheat the oven to 375˚F.
      • Wash and peel the potatoes.
      • With a knife or a mandolin, finely slice the potatoes about 1/8 inch thin. Try to make them uniform in size so that they cook evenly.
      • Spray the baking dish lightly with cooking oil.
      • Place the potatoes upright one at a time in the prepared baking dish, working in concentric circles.
      • Melt the butter in a saucepan over medium heat.
      • Once the butter is melted add the flour and stir to combine. Continue cooking for 2 minutes.
      • Add the milk, onion powder, salt, and pepper, and whisk until the sauce has thickened.
      • Add the cheese and stir until the cheese is melted. Remove from heat.
      • Pour the sauce over the potatoes. Cover with aluminum foil.
      • Place the dish in the oven and cook for 45 minutes.
      • Remove the aluminum foil and continue cooking for an additional 15 minutes.
      • Remove from the oven and sprinkle with fresh parsley.
      • Allow the potatoes to cool, sitting at room temperature for 10 minutes before serving.
