Equipment

  • electric smoker / pellet grill

Ingredients

  • 1 cup black olives - drained
  • 1 cup green olives
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • tsp onion powder
  • tsp granulated garlic
  • tsp chili powder
  • tsp paprika

Instructions

  • Preheat the smoker to 180 degrees.
  • Spread the olives out on a small baking sheet. (I like to line mine with foil first for easy clean up - but it isn't necessary)
  • Drizzle the olive oil and the red wine vinegar over the top of the olives.
  • Combine the onion powder, granulated garlic, chili powder, and paprika in a small dish, stir and then sprinkle over the top of the olives.
  • Place the prepared olives on the smoker and let the smoke for 20-30 minutes. For added flavor you can let them go for up to 1 hour.
  • Remove and serve immediately.

Notes

  • I like to sprinkle them with a little grated parmesan cheese for serving.
  • For added flavor, add a half tsp of liquid smoke to the tray before smoking the olives.
