Ingredients

  • 29 oz pumpkin puree
  • 12 oz evaporated milk
  • 1 cup granulated sugar
  • 3 eggs large - room temperature
  • 3 teaspoons pumpkin pie spice
  • 15.25 oz yellow cake mix or golden butter cake mix
  • 1 ½ cups pecans chopped - divided
  • 1 cup butter unsalted - sliced thinly (2 sticks)
  • whipped cream fresh - for serving - optional
  • ice cream for serving - optional

Instructions

  • Preheat the oven to 350 degrees F.
  • Lightly spray a 13x9 baking dish with cooking spray and then coat it with flour. Set it aside.
  • In a large bowl combine the pumpkin, milk, sugar, eggs and pumpkin pie spice.
  • Whisk it all together until completed combined.
  • Pour the mixture into the prepared baking dish and spread out evenly.
  • Sprinkle the top with the cake mix.
  • Then sprinkle that with 1 cup of the chopped pecans.
  • Cut the butter very thinly and lay them out to cover the cake mix.
  • Bake it in the oven for 60 minutes or until center is set and edges are lightly browned.
  • Allow it to cool slightly and be sure to serve it warm with whipped cream or ice cream on top and additional ½ cup pof chopped pecans .
