Ingredients
29ozpumpkin puree
12ozevaporated milk
1cupgranulated sugar
3eggslarge - room temperature
3teaspoonspumpkin pie spice
15.25ozyellow cake mix or golden butter cake mix
1 ½cupspecanschopped - divided
1cupbutterunsalted - sliced thinly (2 sticks)
whipped creamfresh - for serving - optional
ice cream for serving - optional
Instructions
Preheat the oven to 350 degrees F.
Lightly spray a 13x9 baking dish with cooking spray and then coat it with flour. Set it aside.
In a large bowl combine the pumpkin, milk, sugar, eggs and pumpkin pie spice.
Whisk it all together until completed combined.
Pour the mixture into the prepared baking dish and spread out evenly.
Sprinkle the top with the cake mix.
Then sprinkle that with 1 cup of the chopped pecans.
Cut the butter very thinly and lay them out to cover the cake mix.
Bake it in the oven for 60 minutes or until center is set and edges are lightly browned.
Allow it to cool slightly and be sure to serve it warm with whipped cream or ice cream on top and additional ½ cup pof chopped pecans .
