Keto Sugar Cookies - 3-Ingredient

Keto Sugar Cookies are easy to make with only 3-ingredients, are super soft, chewy, and taste just like the real thing! BONUS there's no almond flour - so the texture is amazing.

Ingredients

  • 1 cup butter
  • cups Erythritol - purecane baking sweetener granulated
  • cups keto flour Mouthwatering Motivation Keto Baking & Pastry Flour
  • 1 tsp almond extract OPT (can also use vanilla extract)

Instructions

  • Preheat the oven to 325 degrees and line baking sheets with parchment paper.
  • Combine butter and granulated erythritol in a large mixer bowl and beat until well combined and mixture is fluffy.
  • Mix in the keto flour and the extract if using it. Beat until the dough pulls away from the sides of the bowl.
  • Portion out 1" balls of dough - roll them between your hands to smooth and shape.
  • Place them on the prepared baking sheets at least 1-2" apart. Press down on the top of the dough to flatten slightly.
  • Sprinkle with additional erythritol if desired. (I usually do this with regular sugar cookies and granulated sugar - but don't usually do this when working with erythritol instead)
  • Bake for 14-16 minutes. Be sure to not over-bake. The cookies will firm up as they cool.
  • Cool on the baking sheet for at least 10 minutes. Then transfer the cookies to a wire rack to finish the cooling process before serving.

Notes

*If you can't find Mouthwatering Motivation Keto Baking & Pastry Flour - you can use King Arthur, Keto Wheat Flour Blend as a substitute - however, the carb counts might change.
