Keto Sugar Cookies are easy to make with only 3-ingredients, are super soft, chewy, and taste just like the real thing! BONUS there's no almond flour - so the texture is amazing.
1tspalmond extractOPT (can also use vanilla extract)
Instructions
Preheat the oven to 325 degrees and line baking sheets with parchment paper.
Combine butter and granulated erythritol in a large mixer bowl and beat until well combined and mixture is fluffy.
Mix in the keto flour and the extract if using it. Beat until the dough pulls away from the sides of the bowl.
Portion out 1" balls of dough - roll them between your hands to smooth and shape.
Place them on the prepared baking sheets at least 1-2" apart. Press down on the top of the dough to flatten slightly.
Sprinkle with additional erythritol if desired. (I usually do this with regular sugar cookies and granulated sugar - but don't usually do this when working with erythritol instead)
Bake for 14-16 minutes. Be sure to not over-bake. The cookies will firm up as they cool.
Cool on the baking sheet for at least 10 minutes. Then transfer the cookies to a wire rack to finish the cooling process before serving.
