Ingredients
8-10poundspiral ham
1cupapple cider vinegar
Glaze
1cupdark brown sugarpacked
¼cupmaple syrup
2tablespoonsapple cider vinegar
2tablespoonsmustard
2teaspoonsWorcestershire sauce
1teaspoonground cloves
Instructions
Preheat the smoker to 250 degrees f.
Place the ham, cut side down, into a large sheet pan and place it in the preheated smoker. Cook for one hour.
Baste the ham with the apple cider vinegar after one hour and then every 30 minutes afterward, until the ham has reached an internal temperature of 135 degrees F.
When the ham is almost done cooking, prepare the glaze.
Glaze
In a small (high heat safe) saucepan or cast-iron skillet, combine all of the glaze ingredients and whisk together. (dark brown sugar, maple syrup, apple cider vinegar, mustard, Worcestershire sauce, and ground cloves.)
Cook the glaze on the smoker (next to the ham) for 10-15 minutes, stirring frequently with a whisk, just until the glaze comes together.
Brush the ham liberally with the maple glaze and then cook for 15 minutes or until the ham reaches 140 degrees F.
Remove the ham from the smoker and tent it with aluminum foil. Allow it to rest for about 30 minutes.
Serve with the reserved drippings on the side, if desired.
