Ingredients

  • 1 cup salted butter melted
  • 1 cup granulated sugar
  • 4 eggs
  • 15 ounces cream-style corn
  • 4 ounces diced green chiles
  • 1 cup Mexican blend cheese
  • 1 cup all-purpose flour
  • 1 cup yellow corn flour
  • 4 teaspoons baking powder
  • ¼ teaspoon table salt

Instructions

  • Preheat the oven to 350 degrees.
  • Prepare a 9x13 baking dish with cooking spray or oil.
  • In a bowl, whisk together the melted butter and sugar until well blended.
  • Add the eggs, corn, and green chiles.
  • Stir in the cheese.
  • In another bowl, whisk together flour, corn flour, baking powder, salt.
  • Combine the flour mixture with the wet mixture, stirring just until blended.
  • Transfer the batter to the prepared baking dish.
  • Bake for 1 hour or until golden brown.
  • Allow to cool for 10 minutes prior to slicing into squares and serving.
