Ingredients
4-5poundschicken thighs - bone in with skin
1cupwater
¼cuporange juice
¼cuplime juice
¼cupapple cider vinegar
3tablespoonsjerk seasoning blend
1tablespoonsoy sauce
2teaspoonsminced garlic
1teaspoonsalt
1teaspooncurry powder
Instructions
Prepare the slow cooker with nonstick cooking spray or spritz with cooking oil.
Place the chicken thighs into the bottom of the slow cooker.
In a large measuring cup or small bowl, combine the seasoning ingredients - water, orange juice, lime juice, apple cider vinegar, jerk seasoning blend, soy sauce, minced garlic, salt, and curry powder. Whisk well.
Pour the juice mixture over the top of the chicken.
Place the lid on the slow cooker and cook on low for 5 to 6 hours.
If a crispier skin is desired, preheat the broiler of the oven. Prepare a large, rimmed baking sheet with aluminum foil and spritz with nonstick cooking spray.
Remove the chicken thighs from the slow cooker and place them on the prepared baking sheet.
Broil for approximately 5 minutes, watching closely, or until the skins have reached the desired crispiness.
