Over Easy Eggs

Ingredients

  • 1 tablespoon unsalted butter
  • 2 Eggs fresh if available

Instructions

  • Set the eggs out on the counter to come to room temperature for about 20 minutes.
  • Add the butter to a large non-stick skillet over medium heat and allow it to melt.
  • Turn the heat down to low.
  • Crack the eggs into the heated skillet and cook for 2-4 minutes until the white is firm and the yolk is still runny.
  • Flip the eggs using a thin spatula and cook for another 15-30 seconds.
  • Remove the eggs from the pan and season with kosher salt and fresh cracked black pepper.

Notes

Using room temperature eggs gives a better end result - but isn't absolutely necessary to making an over easy egg.
