Instant Pot Sesame Salmon Bowls

Equipment

  • 1 pressure cooker I'm using an Instant Pot - but any brand will work

Ingredients

  • ¼ cup soy sauce
  • ¼ cup water
  • 1 tablespoon brown sugar or honey
  • 1 lime juiced
  • 1 tablespoon sesame oil - not included
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger grated
  • 1 teaspoon sesame seeds
  • 1 teaspoon cornstarch
  • ½ teaspoon sriracha
  • 2 center cut salmon filets

Instructions

  • Whisk together all of the ingredients - soy sauce, water, brown sugar or honey, lime juice, sesame oil, garlic, ginger, sesame seeds, cornstarch, and sriracha - (everything except the Salmon) in the Instant Pot.
  • Add the salmon and make sure it gets covered on all sides with the sauce. Place the salmon skin side down and set
  • the Instant Pot to Pressure-Cook for 1 minute.
  • When the Instant Pot has finished, release the pressure manually (be careful, it will steam).
  • Remove the salmon and turn the Instant Pot to Saute.
  • Cook the sauce, stirring occasionally, until it has reduced and thickened-- about 2 minutes.
  • Spoon the sauce over the salmon and enjoy immediately.
  • Store any leftover salmon in an airtight container in the fridge for up to two days.

Notes

I like to serve this salmon over rice, garnished with green onion and lime-- but it is also delicious over a salad or pad thai noodles.
