In a large bowl, add the flour, baking powder and salt, whisk to combine.
Separate the eggs whites and the yolks into 2 separate bowls.
Add the milk, egg yolks and the oil to the dry ingredients and whisk until smooth.
In the other bowl with the egg white, whisk the egg whites until very foamy.
Fold the egg whites into the waffle batter until incorporated, but don’t over beat.
Heat the waffle iron and spray with non-stick cooking spray or cooking oil.
Using a pourable measuring cup or ladle, fill the waffle iron with the batter.
Cook the waffles for 5-8 minutes each or until golden brown, depending on the waffle maker.
Remove from the waffle iron and serve immediately with syrup, confectioner's sugar or fresh fruit.
