Ritz Cracker Chicken Casserole

Ritz Cracker Chicken Casserole is a super easy weeknight dinner that's great for using leftover or rotisserie chicken. It's a family favorite!

Ingredients

  • 4 cups cooked chicken - shredded or chopped - either rotisserie or leftovers
  • 10.5 ounces condensed cream of chicken soup
  • 1 cup sour cream
  • 1 tbsp dried minced onions
  • 2 tsp granulated garlic
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 sleeve Ritz crackers - crushed
  • 1/2 cup butter - melted

Instructions

  • Preheat the oven to 350 degrees.
  • Spray a 9x13 casserole dish with cooking oil - set aside.
  • Combine the chicken, condensed soup, sour cream, minced onions, granulated garlic, onion powder, salt and pepper in a large bowl and mix to combine.
  • Spread the mixture out into the prepared pan and them top with the crushed crackers.
  • Drizzle the melted butter over the top.
  • Bake for 25-30 minutes or until bubbling and the top is golden brown.

Notes

Make sure the chicken is cooled - preferably chilled - otherwise the sour cream can curdle during the mixing process.
