Rocky Road Ice Cream
This easy no-churn Rocky Road Ice Cream recipe is incredibly delicious and is perfect for hot summer days, parties, and celebrations!

- 2 cups heavy whipping cream
- 14 ounces sweetened condensed milk
- 1 tbsp vanilla extract
- 1 cup mini marshmallows
- 1 cup peanuts chopped
- 1 cup chocolate chips
In a large mixing bowl, whip the heavy whipping cream on high speed until stiff peaks form.
Fold in the vanilla extract and the condensed milk.
Add the marshmallows, peanuts, and chocolate chips and fold gently to combine.
Transfer to a plastic ice cream tub or loaf pan and freeze overnight.
Scoop out and enjoy with toppings of your choice!
Store covered in the freezer for up to 1 month.
- I used mini chocolate chips but use whatever you have on hand!
- Make sure you’re using sweetened condensed milk, not evaporated milk
