Lemon Lush Dessert

Lemon Lush Dessert has a buttery shortbread layer topped with sweetened cream cheese, creamy lemon pudding, and whipped cream. It's a lemon-lovers dream and absolutely delicious!

Ingredients

Crust

  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • ¼ cup nuts pecans or walnuts, chopped finely
  • ½ cup unsalted butter softened (1 stick)

Cream Cheese Layer

  • 8 oz cream cheese softened
  • 1 cup granulated sugar
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 8 oz whipped topping thawed

Pudding Layer

  • 2 boxes instant lemon pudding 3.4 oz each
  • 3 cups cold milk

Top Layer

  • 8 oz whipped topping thawed

Instructions

Crust

  • Preheat the oven to 350 degrees F.
  • Spray a 13x9 baking dish with cooking spray. Set aside.
  • Add the crust ingredients (flour, sugar, nuts and melted butter) to large bowl and use a fork to combine well.
  • Press the mixture into the prepared 13x9 baking dish, creating an even, flat layer.
  • Bake the crust for 15-18 minutes or until golden brown.
  • Cool completely.

First Creamy Layer

  • Cream together the softened cream cheese and sugar until smooth.
  • Stir in the zest, juice and whipped topping until smooth.
  • Spread the mixture over the cooled crust.
  • Place in refrigerator to chill at least 30 minutes.

Second Layer

  • In a large bowl, combine the pudding mix and milk and whisk until smooth and creamy.
  • Spread the mixture over the chilled cream cheese layer.
  • Place in the refrigerator to chill at least 15 minutes or until pudding is set.

Third Layer

  • Spread the remaining whipped topping over the pudding layer.
  • Optional - add chopped nuts, lemon zest or lemon slices.
  • Place in the refrigerator until ready to serve - at least 1 hour.
  • Store the leftovers in the refrigerator.
