Ingredients
Crust
1cupall-purpose flour
2tbspgranulated sugar
¼cupnutspecans or walnuts, chopped finely
½cupunsalted buttersoftened (1 stick)
Cream Cheese Layer
8ozcream cheesesoftened
1cupgranulated sugar
Zest of 1 lemon
Juice of 1 lemon
8ozwhipped toppingthawed
Pudding Layer
2boxesinstant lemon pudding3.4 oz each
3cupscold milk
Top Layer
8ozwhipped toppingthawed

Instructions
Crust
Preheat the oven to 350 degrees F.
Spray a 13x9 baking dish with cooking spray. Set aside.
Add the crust ingredients (flour, sugar, nuts and melted butter) to large bowl and use a fork to combine well.
Press the mixture into the prepared 13x9 baking dish, creating an even, flat layer.
Bake the crust for 15-18 minutes or until golden brown.
Cool completely.
First Creamy Layer
Cream together the softened cream cheese and sugar until smooth.
Stir in the zest, juice and whipped topping until smooth.
Spread the mixture over the cooled crust.
Place in refrigerator to chill at least 30 minutes.
Second Layer
In a large bowl, combine the pudding mix and milk and whisk until smooth and creamy.
Spread the mixture over the chilled cream cheese layer.
Place in the refrigerator to chill at least 15 minutes or until pudding is set.
Third Layer
Spread the remaining whipped topping over the pudding layer.
Optional - add chopped nuts, lemon zest or lemon slices.
Place in the refrigerator until ready to serve - at least 1 hour.
