Cookie Ice Cream Sandwiches

Cookie Ice Cream Sandwiches start with deliciously chewy, buttery homemade chocolate chip cookies, then they're sandwiched together with ice cream & coated with sprinkles! So good!

Ingredients

  • 1 cup unsalted butter softened (2 sticks )
  • ½ cup granulated sugar
  • 1 cup brown sugar packed
  • 2 tsp vanilla extract
  • 2 large eggs room temperature
  • 2 ½ cups all-purpose flour
  • ½ tsp salt
  • ½ tsp baking soda
  • 12 ounces chocolate chips semi-sweet or milk
  • ½ gallon vanilla ice cream

Instructions

Cookies

  • Preheat the oven to 350 degrees.
  • Line the baking sheets with parchment paper or a silicone mat.
  • In a large bowl, cream together the butter, granulated sugar, and brown sugar until fluffy.
  • Add the eggs and vanilla extract and mix until well combined.
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the flour mixture to the butter/sugar mixture and beat until combined. Don’t overmix.
  • Fold in the chocolate chips until well combined.
  • Divide the batter using a cookie dough scoop or tablespoon and place on the prepared baking sheets about 2 inches apart
  • Bake for 10-12 minutes. You want the cookies slightly underbaked for the ice cream sandwiches.
  • Remove from the oven and place on a wire rack to cool.

Assemble the Ice Cream Sandwiches

  • Remove the ice cream from the freezer and let soften slightly.
  • Take 1 scoop of the ice cream and place on the bottom of 1 cookie, then top with another cookie that is similar in size, and gently press them together.
  • Dip the sides of the cookie sandwich in the mini chocolate chips or sprinkles, if you like.
  • Place on a baking sheet and return to the freezer until ready to serve.
  • Store leftovers in the freezer.
