Spiced Eggnog Cupcakes with Eggnog Frosting

These homemade Spiced Eggnog Cupcakes with Eggnog Frosting are easy to make and incredibly delicious too. They are the perfect dessert for your Thanksgiving, Christmas, and New Year’s celebrations.

Ingredients

Cupcakes

  • ¾ cup granulated sugar
  • ¼ cup butter – softened
  • ¼ cup vegetable oil
  • ¾ cup eggnog
  • 2 large eggs
  • 1 tsp vanilla extract
  • cups all-purpose flour
  • tsp baking powder
  • 1 tsp nutmeg
  • ½ tsp table salt

Frosting

  • 1 cup butter – room temperature
  • 3 cups confectioner’s sugar
  • 2 tbsp eggnog

Instructions

Cupcakes

  • Preheat the oven to 350°F.
  • Line a 12-cup cupcake pan with cupcake liners.
  • In a large mixing bowl, whisk the sugar, butter, and oil until combined.
  • Add the eggnog, eggs, and vanilla and whisk until combined.
  • In another bowl, mix together the flour, baking powder, nutmeg, and salt.
  • Add the dry mixture to the wet mix in 2 batches, mixing just until smooth after each batch. Scrape down the sides of the bowl as needed.
  • Divide the batter evenly into the liners, filling each to about 2/3 full.
  • Bake for 20 minutes, or until a toothpick inserted in the center of a cupcake comes out clean.
  • Allow the cupcakes to cool to room temperature.

Frosting

  • Using a stand mixer, whisk the butter on medium-high speed until smooth and creamy.
  • Reduce the mixing speed to low, add the confectioner’s sugar, 1 cup at a time. Whisk until smooth and fluffy after each addition. Scrape down the sides of the bowl as required.
  • Add the eggnog and whisk just till combined.
  • Pipe onto the cooled cupcakes and decorate with sprinkles, chopped nuts, or sprinkled nutmeg as desired.

Notes

I used non-alcoholic eggnog for the cupcake recipe. Alcoholic eggnog may change the consistency of the batter and affect baking times. I have not tried it myself.
If you want to reduce the eggnog flavor, leave it out of the frosting and only use it in the cupcakes.
