2eggslightly beaten
⅓cupbuttermilk
½cupunsweetened applesauce
1 ¼cupsmashed bananas
1 ¾cupsall-purpose flour
1 ½teaspoonsbaking soda
½teaspoonsalt
1½cupsSPLENDA®Naturals Stevia SweetenerGranulated
½cupchopped pecans
Instructions
Preheat the oven to 325° F.
Spray a 9x5-inch loaf pan with cooking spray. Set aside.
In a large bowl, blend together the eggs, buttermilk, applesauce, and bananas.
In a separate bowl, sift together the flour, baking soda, and salt.
Add the SPLENDA®Sweetener and stir. Then mix into the banana mixture.
Stir in the pecans.
Spread the batter into the prepared pan.
Bake 50-60 minutes or until a toothpick inserted in the center comes out clean. *Note- if you find the center needs to cook longer, tent the loaf with foil and bake in 5-minute increments until the center comes out clean.
