Swedish Pancakes
These easy Swedish Pancakes are a cross between a pancake & a crepe. Buttery & delicious, perfect when paired with whipped cream & berries. So good!

- 3 eggs- beaten
- 3 cups milk
- 3 tbsp butter- melted
- 1-1/2 cups all-purpose flour
- 1 tsp salt
- 2 tsp granulated sugar
- 1 8 oz tub whipped topping- thawed
- 2 cups frozen berries
Beat eggs & 1/2 cup of the milk in a large bowl
Whisk in flour, salt & sugar
Add melted butter & remaining milk- mix well
Heat griddle to 375 degrees
Ladle a small portion onto skillet - it will run & not hold shape like a regular pancake - this is normal
These will be thin & won't bubble up like a traditional pancake
Cook until brown before flipping to cook other side
**For the filling- combine whipped topping & berries in a small bowl
Add a little to each pancake & roll
Top with additional berry mix & whipped cream to serve
