Ingredients

  • 4 cups cooked rice instant or using a rice cooker
  • 6 large eggs- scrambled
  • 1 lb ground sausage- browned
  • 1 cup corn- cooked
  • 1 cup peas- cooked
  • 1 cup shredded cheddar cheese
  • 2 cups brown or chicken gravy
  • Pinch of Parmesan cheese for topping

Instructions

  • Prepare the rice in the rice cooker.
  • While the rice is cooking, cook the scrambled eggs, cook the corn and peas and brown the sausage.
  • As each ingredient has been cooked, add it to a large bowl.
  • Add the cheddar cheese and the rice (once it has finished cooking) to the mixture.
  • Prepare the gravy to the package instructions. Set aside.
  • Mix all of the ingredients together well in the large mixing bowl.
  • Top with gravy & parmesan cheese when serving.
