Ingredients
3cupsoats
1cupdried cranberries
1cupwalnuts
¼tspsalt
3tsppumpkin pie spice
½cuppumpkin pureenot pie filling
½cupraw honey
¼cupcoconut oil
½tspvanilla extract
Instructions
Preheat oven to 300 degrees & line a baking sheet with parchment paper- set aside
Combine oats, salt & pumpkin pie spice in a large bowl
In a small saucepan, combine pumpkin puree, honey, coconut oil & vanilla
Heat over medium, whisking until it's warm & all ingredients are combined
Immediately pour over oat mixture & stir to coat well
Spread out on prepared baking sheet & bake 25-30 min - stirring half way through
Cool on baking sheet completely before storing
Once cool, toss in cranberries & walnuts & store in an airtight container at room temperature
Notes
**To make this recipe in the Air Fryer - Preheat to 250 degrees. Adjust the ingredients, either reducing by 50-75% depending on the size of your air fryer. Cook for 20 minutes - stirring every 7 minutes. You can remove sooner than the called for time if the granola has reached your desired brown.
Note - this can be made with gluten-free oats. Alternate mix-ins can include pumpkin seeds, maple syrup in place of honey, dried raisins, fruit, or chocolate chips.
