Ingredients

Muffins

  • 1/2 cup butter- room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar- packed
  • 2 eggs- room temperature
  • 1-1/2 tsp vanilla extract
  • 1 cup pumpkin puree not pie filling
  • 1/4 tsp table salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp ground coffee
  • 2 cups all-purpose flour

Streusel Topping

  • 2 tbsp brown sugar
  • 2 tbsp granulated sugar
  • 3/4 tsp cinnamon
  • 3/4 cup all-purpose flour
  • 1/4 cup butter- melted

Glaze

  • 1/2 cup confectioners sugar
  • 1 tbsp Simply Pure Salted Caramel Coffee Creamer

Instructions

  1. Preheat oven to 350 degrees & spray 1 muffin pan with cooking spray
  2. In a small bowl, combine streusel ingredients & mix well with a fork - set aside
  3. In mixer bowl, cream butter & sugars together
  4. Beat in eggs, vanilla & pumpkin puree until smooth
  5. Add in dry ingredients & beat well
  6. Spoon into prepared muffin tin & top with prepared streusel mixture
  7. Bake 20-25 minutes
  8. Remove & cool in pan

Prepare glaze

  1. Combine ingredients & whisk well until smooth
  2. Drizzle over muffins & serve warm
  3. Store at room temperature in a breathable container to make sure they don't get too moist
