- 36 corn tortillas
- 4 cups leftover pulled pork or rotisserie chicken
- 2 tbsp canola oil
- ½ cup shredded sharp cheddar cheese
- ½ cup shredded mozarella cheese
Preheat the oven to 425-degrees.
Heat the tortillas in tortilla warmer for 1-2 minutes in microwave. (do 12-15 at a time)
Spoon 2-3 tbsps of pork in the center of the tortilla- lengthwise across the tortilla.
Add a sprinkle of cheese.
Roll the tortilla tightly & place on baking sheet.
Repeat with all tortillas.
Brush lightly with oil.
Bake for 12 to 15 minutes, or until lightly browned.
Remove and allow to cool slightly before serving.
