Skinny Double Chocolate Brownies that are made with oats & peanut butter - no beans!

Ingredients

  • 1/2 cup creamy peanut butter
  • 2 tbsp raw honey
  • 4 tbsp brown sugar- lightly packed
  • 1 tsp pure vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 large egg
  • 1/4 cup oat flour regular old fashioned oats that have been blended
  • 1/4 cup cocoa powder
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips
  • 1/2 cup milk chocolate chips

Instructions

  1. Preheat oven to 350 degrees
  2. Line an 8 x 8 baking pan with parchment paper. (Lining is a must & you must use this size)
  3. Grind oats in blender or food processor & measure 1/4 cup AFTER grinding
  4. In a large bowl, beat together peanut butter, honey, brown sugar, and vanilla.
  5. Add applesauce & beat until combined
  6. Beat in egg until just combined.
  7. In a separate bowl, combine oat flour, cocoa powder, baking soda, baking powder, and salt. Stir together.
  8. Using a wooden spoon, combine the wet and dry ingredients until combined.
  9. Fold in dark chocolate chips.
  10. Transfer the mixture into prepared 8 x 8 pan.
  11. Sprinkle milk chocolate chips over the top
  12. Bake for 20-22 minutes or until puffy.
