Preheat oven to 325 degrees
Line a baking sheet with parchment paper & spread almonds over it in an even layer
Once oven is to temperature, place sheet in oven & bake 10 minutes
While almonds are baking, combine granulated sugar & honey in a small saucepan
Heat over low heat until sugar has dissolved & mixture comes to a boil
Allow to bubble 1-2 minutes before removing from heat
Remove almonds from oven after 10 minutes, carefully transfer to a medium sized bowl, add honey mixture & toss to coat
Transfer back to parchment lined baking sheet, spread out into an even layer & bake again for 15 minutes
Remove from oven & allow to cool completely
Once cooled, separate any almonds that are stuck together & place all the almonds in a small bowl
In another small bowl, combine salt, raw sugar & nutmeg - stir
Transfer mixture to almonds & toss to coat while almonds are still slightly sticky
Can be store in an air-tight container for several weeks
