Easy Slow Cooker Chicken Fajitas
Ridiculously simple slow cooker dinner recipe.
Servings 6 cups
- 4-6 boneless skinless chicken breasts
- 1 medium yellow onions thinly sliced
- 2-4 medium bell pepper any color - I like several, thinly sliced
- 2 cups salsa of choice + more for garnish
- 1 tsp salt
- 1 tbsp taco seasoning
Add the chicken, onions, peppers, salsa & seasonings to slow cooker - stir to combine.
Cover & cook on high for 4 hours or low for 6, or until the chicken and vegetables are tender.
Remove chicken & transfer to a cutting board to shred with two forks
Add the chicken back into the slow cooker liquid & vegetables
Serve with warm corn tortillas with additional salsa & sour cream
