White Cornmeal Shortbread Bars

Ingredients

  • 1-1/2 sticks butter 3/4 cup room temperature
  • 3/4 cup confectioners sugar
  • 1/2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup finely ground white cornmeal
  • 1/4 tsp salt
  • 2 tbsp sparkling sugar

Instructions

  1. Preheat oven to 325 degrees
  2. Line 8x8 baking pan with parchment - set aside
  3. In mixer bowl, combine butter, confectioners sugar & vanilla & beat until light & creamy
  4. Add flour, cornmeal & salt & mix on low until dough forms moist clumps
  5. Spread into prepared pan- flatten into a smooth, even layer
  6. Score the dough with a knife all the way through the bars before baking
  7. Sprinkle with sparkling sugar
  8. Bake 35-40 minutes or until dry & golden
  9. Immediately cut again along your score marks when removing from oven
  10. Allow to cool completely in the pan before removing & serving
