Preheat oven to 325 degrees
Line 8x8 baking pan with parchment - set aside
In mixer bowl, combine butter, confectioners sugar & vanilla & beat until light & creamy
Add flour, cornmeal & salt & mix on low until dough forms moist clumps
Spread into prepared pan- flatten into a smooth, even layer
Score the dough with a knife all the way through the bars before baking
Sprinkle with sparkling sugar
Bake 35-40 minutes or until dry & golden
Immediately cut again along your score marks when removing from oven
Allow to cool completely in the pan before removing & serving
