Valentine Cinnamon Rolls {Recipe}

Ingredients

  • For the dough:
  • 1 pkg active dry yeast
  • 3/4 cup milk- warmed
  • 1/4 cup granulated sugar
  • 4 large eggs
  • 4 1/2 cups all-purpose flour plus more as needed
  • 1 1/2 tsp kosher salt
  • 6 tbsp unsalted butter- room temp. cut into chunks
  • For the filling:
  • 4 tbsp unsalted butter- room temp cut into chunks
  • 1 cup firmly packed brown sugar
  • 5 tbsp ground cinnamon
  • 4 tbsp butter- melted
  • 1/8 cup cinnamon/sugar mixture
  • For the icing:
  • 3 cups confectioners sugar
  • 2/3 cup milk
  • 1 tsp vanilla extract
  • 1 drop red food coloring

Instructions

  1. To make dough:
  2. In the bowl of mixer, dissolve yeast in warm milk & let stand until foamy. (10 min.)
  3. Add granulated sugar, eggs, flour & salt.
  4. Use dough hook & knead on low speed, adding a little flour if needed until ingredients come together.
  5. Toss in the butter & continue to knead until the dough is smooth & springy. (7 min)
  6. Form dough into a ball & put in an oiled bowl & cover with plastic wrap.
  7. Let dough rise at room temperature until it doubles. (2 hours)
  8. Butter 9x13" baking pan.
  9. Punch down dough & turn onto a lightly floured surface.
  10. Cut dough in half.
  11. Roll out into a rectangle- about 10x7"
  12. Spread with half the soft butter.
  13. Sprinkle with cinnamon/sugar mixture, then cover with brown sugar & then sprinkle with cinnamon.
  14. Starting on the long side- roll dough into a log. Pinch ends to close.
  15. Slice into 8 equal rounds. Arrange slicked side down in pan.
  16. Repeat with remaining dough & ingredients.
  17. Cover pan loosely with plastic wrap & let stand in warm, draft-free spot until puffy. (at least an hour but I refrigerated mine overnight & then let stand at room temp for 1 hour before baking)
  18. Position rack in middle of oven. Preheat to 400 degrees.
  19. Brush buns with melted butter. Sprinkle with additional brown sugar.
  20. Bake until golden brown 20-25 minutes.
  21. Let cool slightly in pan on a wire rack.
  22. Spread with frosting while still warm.
  23. Serve immediately.
  24. For the frosting:
  25. Combine all ingredients in small bowl.
  26. Whisk until combined. Keep adding small amounts of confectioners sugar or milk until you reach the desired consistency that you are after. I wanted mine slightly thin so I could drizzle. You may want yours to spread on so use more confectioners sugar for that.
