Ingredients

  • 1 lb pork tenderloin thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • salt and pepper to taste
  • 8 corn tortillas small - or flour tortillas
  • 1 cup lettuce shredded
  • ½ cup tomatoes diced
  • ¼ cup red onion diced
  • ¼ cup cilantro chopped

Lime wedges for serving

    Instructions

    • Combine the chili powder, cumin, paprika, garlic powder, salt, and pepper in a small bowl. Sprinkle the spice mixture over the slices of pork, toss until evenly coated.
    • Heat olive oil in a skillet over medium-high heat. Add the pork slices and cook for 3-4 minutes on each side or until browned and cooked through.
    • Remove the pork from the skillet and let it rest for a few minutes.

    Warm the tortillas if desired.

      Assemble

      • Place a few slices of pork onto each tortilla.
      • Top with shredded lettuce, diced tomatoes, red onion, and cilantro.
      • Serve with lime wedges on the side for squeezing over the top.
