Ingredients

  • 8 oz cream cheese softened - 1 package
  • ½ cup mayonnaise
  • 15 oz corn drained - 1 can
  • 1 cup cheddar cheese shredded - divided
  • ¼ cup green onions - diced
  • ¼ cup red bell pepper - diced
  • ¼ teaspoon garlic powder
  • salt and pepper to taste

    Instructions

    • Preheat the oven to 350°F (175°C).
    • Beat the cream cheese in a mixing bowl until smooth. Add the mayonnaise and seasonings, beating until blended.
    • Fold the drained corn, softened cream cheese, about ¾ of the shredded cheddar cheese, mayonnaise, green onions, and red bell pepper into the cream cheese mixture.
    • Transfer the mixture to a baking dish and smooth it into an even layer. Top with the remaining cheese.
    • Bake for 25-30 minutes or until the dip is hot and bubbly.
    • Remove from the oven. Garnish with additional green onions, if desired.
    • Allow the dip to cool slightly before serving with tortilla or corn chips.
