Equipment

  • large oval-shaped platter

Ingredients

  • ½ pound sliced meat like prosciutto, salami, or ham
  • ½ pound sliced cheese like provolone
  • ½ pound asparagus blanched
  • 1 cup grapes washed (red and/or green)
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup strawberries
  • 1 cup cherry tomatoes halved
  • 1 cup nuts
  • 1 cup sliced cucumber
  • ½ cup olives green and/or black
  • 1 cup dried apricots
  • ¼ cup whole grain mustard and/or honey
  • Fresh rosemary sprigs for garnish

Instructions

Roses

  • Slice the meats and/or cheeses in half. Lay the slices flat and slightly overlap them. Roll the sheet tightly from one end to create a central bud.
  • Then, arrange additional slices of meat or cheese around the bud, gradually forming layers to resemble rose petals. Secure the layers with toothpicks as needed.
  • Finally, shape and fluff the petals to achieve a more realistic rose appearance.

Assemble

  • At the bottom of the platter, stack the asparagus like a nest or basket.
  • Arrange the fruits, vegetables, and nuts on the oval-shaped platter in layers.
  • At the bottom, place the meat and cheese roses. Fill in any gaps with rosemary sprigs.
  • Serve with mustard and/or honey.
