½poundsliced meatlike prosciutto, salami, or ham
½poundsliced cheeselike provolone

1cupgrapeswashed (red and/or green)
1cupblueberries
1cupraspberries
1cupstrawberries
1cupcherry tomatoeshalved
1cupnuts
1cupsliced cucumber
½cupolivesgreen and/or black
1cupdried apricots
¼cupwhole grain mustard and/or honey
Fresh rosemary sprigsfor garnish
Instructions
Roses
Slice the meats and/or cheeses in half. Lay the slices flat and slightly overlap them. Roll the sheet tightly from one end to create a central bud.
Then, arrange additional slices of meat or cheese around the bud, gradually forming layers to resemble rose petals. Secure the layers with toothpicks as needed.
Finally, shape and fluff the petals to achieve a more realistic rose appearance.
Assemble
At the bottom of the platter, stack the asparagus like a nest or basket.
Arrange the fruits, vegetables, and nuts on the oval-shaped platter in layers.
At the bottom, place the meat and cheese roses. Fill in any gaps with rosemary sprigs.
