10.5ozspring roll wrapperspastry wrappers, not rice spring roll wrappers - 1 package
3cupscoleslaw mixtricolor
1cupbean sprouts
1cupmushroomsthinly sliced
2clovesgarlicminced
2tablespoonssoy sauce
1tablespoonsesame oil
1teaspoongingergrated
1tablespooncornstarch mixed with 2 tablespoons water - for sealing the rolls

Instructions
Combine the garlic, soy sauce, sesame oil, and ginger in a large bowl. Mix well.
Add the coleslaw mix, bean sprouts, and mushrooms to the sauce mixture. Toss well to coat. Allow the mixture to marinate for 5 minutes before tossing again.
Lay out two overlapping spring roll wrappers like a diamond.
Place a spoonful of the vegetable mixture in the center.
Mix the cornstarch and water. Set aside.
Fold the sides of the wrapper over the filling, then fold the bottom over and roll tightly. Use the cornstarch-water mixture to seal the edge.
Preheat the air fryer to 375°F (190°C).
Lightly coat the spring rolls with cooking oil and place them in the air fryer basket, making sure they are not touching.
Air fry for 10-12 minutes, turning over halfway through, or until the spring rolls are golden brown and crispy.
Serve with your favorite dipping sauce, such as sweet chili sauce or soy sauce.
Notes
Notes: I used two spring roll wrappers for each egg roll because they are very thin. This also adds extra crispiness to the final spring roll.Also, notice that these are spring roll pastry wrappers and not Vietnamese rice spring roll wrappers. Spring roll pastry can be found in some grocery stores but is readily available in the freezer section of Asian grocery markets.
