Ingredients

  • 12 large eggs
  • ½ cup mayonnaise
  • 2 tablespoons butter softened - unsalted
  • 1 tablespoon Dijon mustard
  • 1 teaspoon white vinegar
  • salt and pepper to taste

    Fresh chives, finely chopped, for garnish

      Instructions

      • Place the eggs in a single layer in a saucepan and cover with water. Bring them to a boil, then reduce the heat to a simmer and cook them for 12 minutes. Transfer the eggs to an ice water bath to cool.
      • Once cold, peel the eggs and cut them in half lengthwise. Remove the yolks and place them in a bowl. Set the egg whites aside on a plate.
      • Mash the egg yolks with a fork, then add the mayonnaise, softened butter, Dijon mustard, white vinegar, salt, and pepper. Mix until smooth and creamy. I find that a pastry blender works really well for this mashing and mixing process.
      • Spoon or pipe the yolk mixture into the egg whites, creating a generous filling in each half.
      • Garnish each deviled egg with a sprinkle of paprika and a pinch of chopped chives.
      • Refrigerate for at least 1 hour before serving to allow the flavors to come together.
