Ingredients
12large eggs
½cupmayonnaise
2tablespoonsbuttersoftened - unsalted
1tablespoonDijon mustard
1teaspoonwhite vinegar
salt and pepper to taste
paprika for garnish
Fresh chives, finely chopped, for garnish
Instructions
Place the eggs in a single layer in a saucepan and cover with water. Bring them to a boil, then reduce the heat to a simmer and cook them for 12 minutes. Transfer the eggs to an ice water bath to cool.
Once cold, peel the eggs and cut them in half lengthwise. Remove the yolks and place them in a bowl. Set the egg whites aside on a plate.
Mash the egg yolks with a fork, then add the mayonnaise, softened butter, Dijon mustard, white vinegar, salt, and pepper. Mix until smooth and creamy. I find that a pastry blender works really well for this mashing and mixing process.
Spoon or pipe the yolk mixture into the egg whites, creating a generous filling in each half.
Garnish each deviled egg with a sprinkle of paprika and a pinch of chopped chives.
Refrigerate for at least 1 hour before serving to allow the flavors to come together.
