Ingredients

  • 4 pounds corned beef brisket with spice packet, 3-4 pounds
  • 1 large onion cleaned and cut into wedges
  • 1 pound carrots peeled and diced
  • 1 pound yellow potatoes small, washed and cut in half
  • water
  • 1 cloves garlic minced
  • 2 bay leaves
  • 1 green cabbage cut into wedges ** see notes
  • salt and pepper to taste

Serving

    Horseradish

      Mustard, grainy, Dijon

        Instructions

        • Rinse the corned beef under cold water and pat it dry with paper towels.
        • Place it in the slow cooker, fat side up.
        • Add the onion, carrots, and potatoes.
        • Cover it with water, about 3-4 cups.
        • Sprinkle in the spice packet, garlic, and bay leaves.
        • Cover it and cook on low for 5-6 hours.
        • Add the cabbage and continue cooking for 2 hours.
        • Remove it from the slow cooker and allow the corned beef to rest for 15 minutes before slicing.
        • Serve with potatoes, carrots, cabbage, and sauce if desired.
