Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, toss the thinly sliced potatoes with olive oil, paprika, garlic powder, onion powder, salt, and pepper until evenly coated.
Arrange the seasoned potato slices in a single layer on a baking sheet.
Bake in the preheated oven for 15-20 minutes or until the potatoes are golden and crispy. Remove the baking sheet from the oven and transfer enough potatoes to a cast iron skillet to create a single layer, overlapping slightly.
Sprinkle about ⅓ of the shredded cheddar cheese evenly over the potatoes. Add about 1.3 of the bacon and green onions.
Repeat the layers twice, ending with the bacon and cheese.
Place the skillet in the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool slightly. Drizzle with sour cream and garnish with the remaining green onions.
