Ingredients

  • 4 potatoes medium-sized, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste
  • 1 cup cheddar cheese shredded
  • ½ cup bacon cooked and crumbled
  • ¼ cup green onions sliced
  • ¼ cup sour cream

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the thinly sliced potatoes with olive oil, paprika, garlic powder, onion powder, salt, and pepper until evenly coated.
  • Arrange the seasoned potato slices in a single layer on a baking sheet.
  • Bake in the preheated oven for 15-20 minutes or until the potatoes are golden and crispy. Remove the baking sheet from the oven and transfer enough potatoes to a cast iron skillet to create a single layer, overlapping slightly.
  • Sprinkle about ⅓ of the shredded cheddar cheese evenly over the potatoes. Add about 1.3 of the bacon and green onions.
  • Repeat the layers twice, ending with the bacon and cheese.
  • Place the skillet in the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool slightly. Drizzle with sour cream and garnish with the remaining green onions.
  • Serve immediately and enjoy these delicious Potato Nachos as a crowd-pleasing appetizer or snack.
