Ingredients

1 cup frying oil

    Dough

    • ¾ cup milk - room temperature
    • 3 tablespoons granulated sugar
    • tsp yeast
    • pinch salt
    • 1 egg - room temperature
    • 2 tablespoons butter - room temperature
    • cup all-purpose flour

    Topping

    • ¾ cup confectioner’s sugar

    Instructions

    • Combine milk, sugar, yeast, and salt in a bowl.
    • Beat the egg into the dry mixture, and then add the soft butter. Lightly beat the mixture with a fork.
    • Add the sifted flour in batches. Knead into a soft, (slightly sticky) dough.
    • Roll the dough into a ball and place it in a greased bowl. Cover the bowl with plastic wrap. Make 5-6 holes in the plastic wrap with a toothpick. Leave the dough in a warm place to rise for 1 hour. The dough should increase in volume by 2 times.
    • Roll out the dough into a 1/4-inch thick sheet.
    • Cut into 2.5-inch squares.
    • Heat the oil in a saucepan.
    • Fry the beignets until golden, about one minute. Using a slotted skimmer, transfer the finished doughnuts to a plate lined with several layers of paper towels to absorb excess oil.
    • Let cool and sprinkle generously with confectioner’s sugar.
