1 cup frying oil
Dough
¾cupmilk - room temperature
3tablespoonsgranulated sugar
1½tspyeast
pinchsalt
1egg - room temperature
2tablespoonsbutter - room temperature
1¾cupall-purpose flour
Topping
¾cupconfectioner’s sugar
Instructions
Combine milk, sugar, yeast, and salt in a bowl.
Beat the egg into the dry mixture, and then add the soft butter. Lightly beat the mixture with a fork.
Add the sifted flour in batches. Knead into a soft, (slightly sticky) dough.
Roll the dough into a ball and place it in a greased bowl. Cover the bowl with plastic wrap. Make 5-6 holes in the plastic wrap with a toothpick. Leave the dough in a warm place to rise for 1 hour. The dough should increase in volume by 2 times.
Roll out the dough into a 1/4-inch thick sheet.
Cut into 2.5-inch squares.
Heat the oil in a saucepan.
Fry the beignets until golden, about one minute. Using a slotted skimmer, transfer the finished doughnuts to a plate lined with several layers of paper towels to absorb excess oil.
Let cool and sprinkle generously with confectioner’s sugar.
